- Choose one or two of the three island groups – Luzon, the Visayas or Mindanao – per trip: with 7,641 islands, getting between them means domestic flights or ferries, so a tight multi-island route eats time.
- In Vigan, join the late-afternoon queue at the empanada stalls around Plaza Burgos: a crisp rice-flour shell around grated green papaya, egg and Vigan longganisa, fried to order and dipped in Ilocano vinegar.
- See Bohol's Chocolate Hills toward the end of the dry season, when the grass on more than 1,200 limestone mounds dries to brown and the name makes sense; in the wet months they are green.
- Ride a jeepney at least once: these shared minibuses began with surplus US Army jeeps left after the Second World War, which Filipinos rebuilt with roofs and facing benches and painted in vivid colours.
